Light & Lemony Fruit Pizza

  • 1 Package of sugar cookie dry mix – such as Betty Crocker pouch
  • 1/2. unsweetened applesauce
  • 1 T. pure vanilla
  • 2 egg whites

Mix all together and bake at 350 for about 12-15 minutes in a round cake pan.  DO NOT OVERBAKE.  It is better to have it be a little less cooked than a little more cooked because it will be dry and slightly rubbery if overcooked.  It will actually taste as healthy as it is if you overcook it :) .

Light and Lemony Frosting

  • Sugar-free lemon pudding made as directed (with 2c. skim milk)
  • 1/2c. 0% Greek yogurt (plain)
  • 1/2 container of Cool-whip – I used fat-free
  • 1 T. fresh lemon juice

Mix the already made pudding with the cool-whip, yogurt and lemon juice.

** Make sure the cake is very cool/cold before adding the frosting because you do not want the frosting to melt and run all over the cake.  The colder the cake and frosting the lighter it will be!

Add berries of your choice and enjoy!!
