I made it to the pool for a few hours today and when I got home I was a little hungry but it was pretty close to dinner time, so I decided to skip the snack. Since Brady was still in NYC I decided to take advantage of my meatless dinner freedom and make a feast of veggies.
Summer Veggie Stir-Fry with Marinara
Chop the following veggies:
asparagas zucchini broccoli tomatoes roasted corn (from TJ’s) arugula
Stir fried them with

I got home from working out and going to the grocery store and I was starving! I resisted the urge to open a box of cereal and eat it all the way home. It was worth the wait. When I got home I used up my leftovers on a few “planks” (just thick strips) of zucchini. I would try this for dinner another time!

This morning I wanted to eat something small because I was planning on working out around 9:30am. I debated not eating breakfast, but knew I would not make it through the workout without something good in my stomach, and breakfast at 11 didn’t sound like a good idea. I made an easy oatmeal combo by mixing the following:
- 1/4 c. dry rolled oats
- 1/2 banana sliced thin
- 1 T. wheat bran
-1 t. ground flax
- splash
