Blueberry Oatmeal Pancakes!

Since my mom is here, we have been running a mile a minute doing things for the house and getting settled.  It is coming along.  I am excited to have people over soon!

This morning we ran around and did errands then we just ran/walked a few miles.  We were starving by the time we ate, close to four hours after we woke up.  I did have half a luna bar before the run which gave me a little more energy than I would have had.

When we got home, I attempted Kath’s oatmeal pancake.  My mom is up for trying anything so she readily agreed.  I mixed (for the two of us):

- 3/4 rolled oats ( I would use minute oats next time so they are less coarse)

- 3 egg whites

- 1 tsp.  vanilla and cinnamon

- 1 Tbs. Splenda

- 1 Tbs. ground flax

- 1/4 wheat bran

- 3/4 c. FRESH BLUEBERRIES :)

I mixed all of the ingredients in a bowl.  I then made 4 small pancakes on a warm skillet sprayed with Pam.  I let the pancakes cook for a minute before flipping them.  We ate them on the deck with a spritz of spray butter and a squirt of lite maple syrup.

* Next time I would use the quick oats or maybe let the egg/oat mix sit in the fridge for a minute before cooking.  I think this would help to combine the ingredients more. I would also add mashed banana into the batter like Kath does!
